Its paste, ivory white or straw-yellow in colour, has a light hole that gives the cheese a compact and delicately crumbly texture. With a maturation that enhances the characteristics of sheep's milk, this pecorino brings the authentic aromas of the pastures and the dairy tradition to the table, offering a rustic and genuine experience.
