Pecorino di Grotta Stagionato is a cheese with a strong character, the result of a long maturation in natural caves, where the stable temperature and humidity environment allows for optimal maturation. The surface of the cheese is treated with linseed oil, which helps keep the rind in perfect condition and gives it a rustic and authentic appearance. The paste, an intense ivory white, is compact and crumbly, typical of prolonged maturation, and has an intense and complex aromatic profile that is released in every taste.
