Pecorino Stagionato al Tartufo is an excellent pecorino, made unmistakable by the addition of truffle brisure that amplifies its aroma and flavor. This unique combination of a maturation of about 120 days and the intensity of the truffle creates a cheese of great refinement and character. The paste, compact and semi-hard, lends itself both to tasting at the table and to flaking on hot dishes, offering a rich and enveloping gastronomic experience. The cheese has a white color with distributed truffle brisure, which adds complexity to the texture.

Milk: Sheep.

Truffle pearls intensify the aroma of the cheese, adding an elegant and refined texture that complements the richness of the truffle brisure.

The natural sweetness of the figs and the balanced acidity of the balsamic vinegar blend harmoniously with the Pecorino with Truffle, creating a contrast that emphasizes the earthy notes of the cheese.

This jelly adds a touch of elegance and a slightly sweet and sour note that enhances the intensity of the truffle, enriching the overall taste experience.

The purissima di frutti di bosco, with its slightly acidic and fruity taste, perfectly balances the saltiness of the pecorino, adding a fresh and lively note.

Beer: Amber and slightly malty craft beer, which enhances the aromatic notes of the truffle and the saltiness of the pecorino.

Wines: Full-bodied and structured red wine, such as a Barolo or a Brunello di Montalcino, or an elegant and complex white wine such as a barrel-aged Chardonnay.

Bread: Homemade bread or wholemeal croutons, which complement the crumbly texture of the cheese.
