Fontina Valdostana d'Alpeggio DOP is a fine semi-cooked cheese, produced with whole cow's milk from a single milking, maintaining the natural acidity of fermentation. Aged on wooden boards for at least 80 days, it develops a delicate and melting flavour on the palate. The thin and smooth rind encloses a compact paste, whose colour varies from ivory to straw yellow with the age of the cheese. Ideal for tasty hot bread croutons or paired with blueberry jam, Fontina is also perfect for fondues, risottos and savory pies, thanks to its excellent melting ability.

  • Aroma: Delicate, with lactic notes and a light herbaceous scent, typical of mountain pastures.

  • Texture: Semi-cooked, compact and melting, which melts easily in the heat, making it ideal for preparing hot dishes.
