Parmigiano Reggiano Vacche Rosse Organic and Biodynamic is an excellent product of the Italian dairy tradition, made with raw milk from red cows, raised using organic and biodynamic methods. This production respects the environment and dairy traditions and guarantees a natural, healthy and flavourful cheese. With a 30-month maturation, Parmigiano Reggiano Vacche Rosse acquires a complex and intense organoleptic profile, perfect for those who love mature and structured flavours.

Milk: Raw milk from red cows, raised using organic and biodynamic methods.

Organoleptic Characteristics

  • Appearance: Traditional cylindrical shape with a hard and robust rind. Intense straw yellow paste, without holes or with minute holes.
  • Structure: Greater granularity compared to the 24-month maturation, with a more crumbly and slightly drier consistency.
  • Smell and Aroma: Complex and developed aromas, with notes of butter, milk, yogurt and dried fruit, accompanied by hints of nutmeg and hay, which characterize a long-aged Parmigiano.
  • Flavour: Strong and rich, with a perfect balance between salty, acidic and sweet. The predominance of sweet evolves into more mature and intense notes, with a persistent and complex aftertaste that stimulates every taste.
