Antiche Armonie al Rosmarino is an artisanal cheese made from a mixture of cow and sheep milk, produced in accordance with tradition. After maturing for at least 40 days, it is further refined for 30 days in a terracotta jar, together with rosemary and other natural elements. This method of refining gives the cheese an intense and unmistakable aroma, while the aromatic notes of rosemary enhance the strong and enveloping flavor, preserving the integrity and freshness of the product.

Milk: Mixed cow and sheep milk.

Organoleptic Characteristics

  • Appearance: Thin and slightly wrinkled rind, with traces of rosemary. Compact paste of straw yellow color.
  • Aroma: Intense aroma with strong aromatic notes of rosemary, enriched by a light fragrance of sheep milk.
  • Flavor: Strong and aromatic taste, balanced between the herbaceous notes of rosemary and the natural sweetness of the milk.
  • Texture: Semi-hard and slightly crumbly, a characteristic due to the aging process.
