Antiche Armonie alla Menta is a mixed cheese made from cow's and sheep's milk, created according to artisanal tradition. After maturing for at least 40 days, it is refined for a further 30 days in a terracotta jar with fresh mint leaves. This refining process gives the cheese an unmistakable scent and a fresh and intense aroma, making it particularly popular during the summer season for its freshness and versatility.

  • Appearance: Thin and wrinkled rind with visible traces of mint. Straw yellow paste, enriched with slight green hues due to the refinement with mint.
  • Aroma: Fresh and aromatic, with lively notes of mint and a delicate lactic fragrance that completes the olfactory profile.
  • Flavor: Delicate and refreshing, with a persistent herbaceous note that envelops the palate.
  • Texture: Semi-hard, with a slight friability that enhances the softness and freshness of the paste.

Wines: An aromatic white such as Vermentino or Gewürztraminer, which balances the freshness of the cheese with its floral and fruity notes.
