Antiche Armonie alle Foglie di Ulivo is an artisanal cheese made from cow's and sheep's milk, made according to traditional methods. After maturing for at least 40 days, it is refined for another 30 days in a terracotta jar with olive leaves, which give the cheese a delicate flavor rich in Mediterranean nuances. The aromatic notes of the olive leaves create a velvety profile, making this cheese a unique sensory experience that melts in the mouth.

Milk: Mixed cow's and sheep's milk.

Organoleptic Characteristics

  • Appearance: Thin and smooth rind, embellished with traces of olive leaves. Pale yellow paste, compact but with a silky consistency.
  • Aroma: Delicate, with light aromatic notes of olive and a light herbaceous accent that recalls the Mediterranean.
  • Flavor: Soft and round, with a subtle aftertaste of olive that enriches the taste of the milk without covering it.
  • Texture: Semi-soft, velvety and able to melt on the palate.
