Casciotta d'Urbino DOP is a traditional cheese from the province of Pesaro and Urbino in the Marche region, with limited production also in some municipalities in the province of Rimini in Emilia-Romagna. Produced with pasteurized whole sheep's milk (70-80%) and goat's milk (20-30%), it stands out for its sweet and delicate flavor, due to the sheep and goats being fed local mountain herbs. With a minimum maturation of 20 days, Casciotta d'Urbino is a soft cheese, particularly digestible and with a reduced salt content. The Protected Designation of Origin (PDO) guarantees its quality and authenticity, making it perfect for appetizers, fresh accompaniments or as the protagonist of the table.

Milk: Mix of pasteurized whole sheep's milk (70-80%) and goat's milk (20-30%).

Lavender honey, with its delicate, floral aroma, enriches the sweetness of Casciotta d'Urbino, offering a harmonious combination that evokes the scents of mountain herbs.

The pearls with white dressing, with their freshness and light acidity, complement the creaminess of the cheese, adding a refined and lively note.

The blueberry compote and balsamic vinegar creates a sweet-acid contrast that enhances the herbaceous and delicate nuances of Casciotta, offering an elegant and balanced touch.

The raspberry jelly, with its sweet and slightly acidic flavor, blends harmoniously with the delicate taste of the cheese, enriching the taste experience with a fruity note.

The cream with balsamic vinegar and berries, with its complexity and richness of flavor, enhances the delicacy of the cheese, adding an aromatic depth that completes the harmony of the dish.

  • Purissima: Strawberries

Fresh strawberries, sweet and slightly acidic, create a refreshing combination that amplifies the delicacy of the cheese and makes it perfect for light appetizers.

  • Traditional: Savòr Modenese

Savòr Modenese, with its fruity and slightly spicy intensity, enriches the flavor of the cheese, offering a taste experience that marries tradition and refinement.

Beer: It pairs excellently with a blanche beer or a wheat beer, whose freshness accompanies the delicate flavor of the cheese.

Wines: Ideal with a light and fruity white wine, such as a Verdicchio dei Castelli di Jesi or a Trebbiano, which enhance the sweet and fresh notes of the cheese.

Bread: Perfect with whole wheat bread or soft focaccia, which complement its creamy and crumbly texture.

Other Pairings: Excellent with fresh fruit such as grapes or figs, or with seasonal vegetables such as cherry tomatoes and cucumbers, perfect for creating fresh and light appetizers.

Recommended Knife: We recommend a smooth-bladed knife for soft cheeses, for a clean cut that preserves the creamy and crumbly texture.
