Erborinato di Pecora is a blue cheese with great character, produced with pasteurized sheep's milk. Its cylindrical shape, with a fine and rough rind in shades ranging from creamy white to orange brown, is enriched by a bloom of gray and ochre molds that enhance its rustic appearance. The creamy paste, streaked with blue-green veins, offers a melting consistency that pleasantly melts in the mouth. With a fruity and slightly salty flavor, this cheese is ideal for lovers of intense and aromatic flavors.

Organoleptic Characteristics

  • Appearance: Cylindrical shape with flat faces and straight sides. Fine and rough rind, varying from creamy white to orange brown, with gray molds and ochre spots. Ivory paste, blue and melting, with blue-green veins.
  • Aroma: Intense and complex, with notes of noble rot, dried fruit and undergrowth, which give depth to the olfactory profile.
  • Flavor: Fruity and slightly salty, with a strong character typical of blue cheeses that harmonizes with the sweetness of sheep's milk.
  • Texture: Melting and creamy, velvety on the palate, with a structure that melts pleasantly.
