Erborinato Vaccino is a blue cheese of great intensity, produced with raw cow's milk. Its cylindrical shape and light grey bloomy rind, enriched with moulds that vary from white to yellow, give it a unique appearance. The ivory paste, with well-distributed blue veining and blue-green veins, offers a creamy and slightly crumbly consistency. The complex and strong flavour, with an initial sweetness followed by a pleasant spiciness, makes it perfect for those looking for a cheese with a rich and unmistakable aromatic profile.

  • Appearance: Cylindrical shape with flat faces and straight sides, light grey bloomy rind with moulds that range from white to yellow. Ivory paste with well-distributed blue-green veins.
