Fontina Valdostana DOP is a full-fat, semi-cooked cheese, produced exclusively with raw whole cow's milk from a single milking, from the Aosta Valley. The Protected Designation of Origin (PDO) guarantees the authenticity and the link of the product with the territory. The flattened cylindrical shape has flat faces and an originally concave side, which can soften with maturation. The soft and elastic paste, full of holes, and the sweet and delicate flavor, which intensifies with time, make this cheese a perfect choice both to be enjoyed alone and to enrich various culinary preparations.

Organoleptic Characteristics

  • Appearance: Flattened cylindrical shape, with flat faces and a concave side. Thin and compact rind, soft or semi-hard, with a color that varies from light brown to dark brown. Elastic and soft paste, ivory or straw yellow in color, with well-distributed holes.
  • Aroma: Lactic and delicate, with light herbaceous and buttery notes that intensify with aging.
  • Flavor: Sweet and delicate, with a melting consistency on the palate, which becomes more marked and complex with the passing of time.
  • Texture: Soft and elastic, with a melting consistency that makes it ideal for many culinary preparations.
