- Appearance: Irregular shape with dimensions of 13 x 11 cm. The rind has a rustic and variable appearance due to the pit maturation, while the paste is compact, ivory-colored, and slightly crumbly.
- Aroma: Intense and rich, with notes of undergrowth, leather and hay, enriched by the characteristic aroma of goat's milk.
- Flavor: Strong and complex, with a balance between the sweetness of goat's milk and the flavor of the pit maturation, and a light spicy note.
- Texture: Compact and crumbly, it crumbles when cut, but softens pleasantly in the mouth.
