Formaggio di Fossa di Capra is a unique artisanal cheese, born from the combination of the aromas of goat's milk and the intensity of the pit maturation. This process, which takes place in pits dug into the ground, gives the cheese a complex character and an enveloping aromatic bouquet. The pit maturation enhances the distinctive characteristics of goat's milk, making this cheese ideal for those who appreciate intense and authentic flavors, but easily digestible.

Organoleptic Characteristics

  • Appearance: Irregular shape with dimensions of 13 x 11 cm. The rind has a rustic and variable appearance due to the pit maturation, while the paste is compact, ivory-colored, and slightly crumbly.
  • Aroma: Intense and rich, with notes of undergrowth, leather and hay, enriched by the characteristic aroma of goat's milk.
  • Flavor: Strong and complex, with a balance between the sweetness of goat's milk and the flavor of the pit maturation, and a light spicy note.
  • Texture: Compact and crumbly, it crumbles when cut, but softens pleasantly in the mouth.
