Formaggio di Pecora Nero Intenso is a traditional and rustic cheese, produced exclusively with sheep's milk. The smooth and slightly oily black rind is a reminder of the ancient peasant custom of protecting the forms with olive oil and ash, ensuring prolonged conservation and giving the cheese a fascinating and authentic appearance. With a minimum maturation of 15 days, this cheese releases a rich and intense flavor, typical of sheep's milk, with a slightly crumbly white paste that provides a perfect balance of softness and structure.
