Nostrale Piemontese is a traditional cheese with an authentic flavour, produced with whole raw cow's milk and deeply linked to the Piedmont region. Its round shape, with flat sides and a slightly convex side, recalls the ancient cheesemaking tradition of the region. The elastic and smooth rind, initially light straw-yellow in colour, evolves towards reddish-brown tones as the cheese matures, while the white straw-yellow paste with widespread holes offers an inviting consistency. With an intense and harmonious flavour that becomes richer over time, this cheese is perfect for those who love strong and genuine flavours.

Organoleptic Characteristics

  • Appearance: Round shape with flat sides and a slightly convex side. Elastic and smooth rind, initially light straw-yellow, which evolves towards reddish-brown with maturation. White straw-yellow paste with widespread holes.
  • Aroma: Fragrant and lactic, with light herbaceous notes that intensify with the passing of time.
  • Flavor: Intense and harmonious, which becomes more characteristic and complex as the cheese ages, maintaining a perfect balance between sweetness and flavor.
  • Texture: Soft and slightly elastic, with a pleasantly melting texture on the palate.
