Parmigiano Reggiano Prodotto di Montagna represents the highest quality among mountain DOP cheeses, certified by the EU to guarantee origin and authenticity. Produced exclusively with raw milk from mountain stables, with 60% mountain-grown feed, this cheese is subjected to a rigorous quality selection at 20 months through a “hammer” evaluation by the Consortium experts. With a maturation of 24 months, it develops a rich and complex organoleptic profile, ideal for those who love authentic and traditional flavors.

Milk: Raw milk from mountain stables, with a predominantly mountain-grown feed.

Organoleptic Characteristics

  • Appearance: Traditional cylindrical shape with a hard and resistant rind. Straw-yellow paste, without holes or with minute holes.
  • Structure: Clear graininess, compact and crumbly consistency, with a grainy texture and tyrosine crystals that enrich its profile.
  • Smell and Aroma: Complex and intense, with notes of dried fruit and hints of meat broth, characteristic of mountain aging.
  • Taste: Perfect balance between salty, acidic and sweet, accompanied by a light spicy note that adds depth to the taste.
Aging: 24 months.

Recommended Pairings

  • Honey: Miele di Melata

Honeydew honey, with its earthy and delicately sweet profile, enhances the complex and slightly spicy notes of Parmigiano, balancing its flavor.

  • Pearls: Perle all'Aceto Balsamico di Modena IGP

These pearls add a sweet and sour touch that contrasts with the crumbly Parmigiano, offering an explosion of flavor on the palate and intensifying the sensory experience.

  • Compote: Composta di Pere e "Aceto Balsamico di Modena IGP"

The natural sweetness of the pear and the balanced acidity of the balsamic vinegar harmonize perfectly with the aromatic profile of the Parmigiano, offering a refined combination.

  • Gelatin: Gelatina all'"Aceto Balsamico di Modena IGP"

The balsamic vinegar jelly provides a sweet-sour note that pairs with the complexity of the Parmigiano, enhancing its characteristics and adding a hint of freshness.

  • Cream: Gelatina all'"Aceto Balsamico di Modena IGP"

This cream combines the sweetness of the figs and the acidity of the balsamic vinegar, enhancing the intense notes of the Parmigiano and giving a velvety touch to the palate.

  • Purissima: Purissima di Mirtilli Selvatici

With its light acidity and fruity flavor, the wild blueberry purissima contrasts pleasantly with the saltiness of the Parmesan, adding a fresh and lively accent.

  • Traditional: Mostarda Fina di Carpi

The mustard, with its sweet and slightly spicy character, marries perfectly with the grainy and complex structure of the Parmigiano, offering a complete and harmonious taste experience.

Beer: It pairs well with a Saison beer or an abbey beer, whose aromatic complexity harmonizes with the notes of the Parmigiano.

Wines: Ideal with a structured and mineral white wine such as a mountain Chardonnay, or a light and fresh red such as a Pinot Noir, which balance and enhance the intense flavor of the cheese.

Bread: Perfect with wholemeal bread or rustic croutons, which accompany the crumbly and grainy texture.

Other Pairings: Delicious grated on first courses, or enjoyed alone with honey and dried fruit to fully savor its complexity and mountain origins.

Recommended Knife: We recommend an almond-shaped knife for aged cheeses, perfect for breaking the cheese while maintaining its grainy texture.
