Parmigiano Reggiano Prodotto di Montagna is an authentic DOP excellence produced with raw mountain milk, which guarantees its origin and quality. The EU certification ensures that the milk comes exclusively from mountain stables, with at least 60% of the feed grown in these areas. Selected with a rigorous evaluation at 20 months, this cheese reaches full maturity at 30 months, developing a rich and intense organoleptic profile, perfect for those looking for strong and complex flavors.

Organoleptic Characteristics

  • Appearance: Traditional cylindrical shape with hard rind. Intense straw yellow paste, without holes or with minute holes.
  • Structure: Very evident granularity, compact and very crumbly consistency, enriched with numerous tyrosine crystals that give it a distinctive crunchiness.
  • Smell and Aroma: Complex and enveloping, with notes of dried fruit and meat broth, enriched by spicy hints, such as nutmeg, typical of a long maturation in the mountains.
  • Flavor: Savoury and intense, with a slight spiciness that adds depth, while the sweetness is more attenuated, leaving room for a rich and persistent taste.
