Parmigiano Reggiano Prodotto di Montagna, aged for 36 months, represents the pinnacle of the mountain DOP tradition. The EU certification ensures the origin of the milk, milked entirely in mountain stables, and a natural diet of the cows, at least 60% of which is cultivated in mountain areas. With a rigorous quality assessment carried out at 20 months, this cheese reaches its maximum expression in complexity and flavor at 36 months, ideal for those looking for a strong and decisive taste.

Organoleptic Characteristics

  • Appearance: Traditional cylindrical shape with a hard crust. Intense straw-yellow paste, without holes or with minute holes.
  • Structure: Very evident granularity, very crumbly and grainy consistency, enriched with numerous tyrosine crystals that give a pleasant crunchiness.
  • Smell and Aroma: Complex and deep, with notes of dried fruit, meat broth, and a light nutmeg spiciness, typical of a long maturation in the mountains.
  • Flavor: Strong and rich, with notes of spices and dried fruit. The flavor is balanced by a persistent and complex aftertaste, an expression of the maturity of the cheese.
