Parmigiano Reggiano Vacche Rosse, produced with the fine milk of Vacche Rosse, is a cheese of exceptional quality, made unique by the protein and mineral characteristics of the milk of this bovine breed. The 30-month maturation gives this Parmigiano a drier and more crumbly structure, with an accentuated graininess and an aromatic complexity that makes it unforgettable. Herbaceous aromas and hints of dried fruit enrich the taste profile, offering the palate a perfect balance between flavor and sweetness. This cheese, particularly digestible, is ideal for those seeking an intense and authentic flavor.

Organoleptic Characteristics

  • Appearance: Traditional cylindrical shape with a hard crust. Intense straw-yellow paste, without holes or with minute holes.
  • Structure: Very evident graininess, crumbly and dry consistency, enriched with tyrosine crystals that give a crunchy and characteristic texture.
  • Smell and Aroma: Complex notes of aromatic herbs and dried fruit, which give depth and intensity.
