Pecorino Gran Riserva is an excellent cooked curd cheese, produced with pasteurized sheep's milk, which respects the dairy tradition by enhancing the best qualities of sheep's milk. With a maturation that can reach 18 months, this cheese develops extraordinary organoleptic characteristics, maximizing complexity and intensity. The smooth rind, golden yellow in the young forms, evolves into a dark brown tone as the maturation progresses, giving the cheese a rustic and inviting appearance. The paste, compact and hard, straw-yellow in color, has a slight hole and becomes more crumbly as time passes. Pecorino Gran Riserva is perfect to be enjoyed at the end of a meal or as an ingredient in hot dishes, adding depth and refinement to every bite.

Organoleptic Characteristics

  • Appearance: Cylindrical shape with a smooth rind, which varies from golden yellow in the young forms to dark brown in the advanced maturation. Straw-white paste, compact and slightly eyed.
  • Aroma: Sweet and aromatic in the early stages, with notes of dried fruit and herbaceous nuances that intensify with time.
  • Flavor: In young cheese it is sweet and aromatic, while in advanced maturation it offers marked and complex flavors, with a balance between flavor and sweetness and a persistent aftertaste.
  • Texture: Hard and compact, with a crumbly structure that develops with maturation.
