Soffice di Capra is a delicate cheese, made with pasteurized goat's milk, characterized by a soft texture and a refined flavor. Its cylindrical shape with flat faces and thin rind, covered with a bloom of white or ivory mold, give the cheese an elegant appearance. The paste, tender and finely grainy, is enriched with a light hole that enhances its structure. The flavor is slightly acidic and delicately salty, with a subtle hint of goat's milk that harmonizes perfectly with the aroma of mushroom and undergrowth, offering a fresh and delicate taste experience.
