Untello di Pecora is a cheese made with pasteurized sheep's milk, known for its compact consistency and a unique rind, obtained thanks to repeated washings with olive oil during maturation. This process gives the rind a greasy appearance and a grey/green color, enriched by natural molds that amplify its aromatic profile. The paste is a light ivory color, tender when cut, and has small, well-distributed holes. Its flavor is full and intense, but balanced, with a delicate aroma that makes this cheese perfect to enjoy alone or in gourmet combinations.

Organoleptic Characteristics

  • Appearance: Cylindrical shape with a greasy, grey/green rind, resulting from washings with olive oil and the presence of natural molds. Ivory paste, tender, with small, well-distributed eyes.
  • Aroma: Pleasant and complex, with mature lactic notes and light nuances of natural mold that give depth to the aromatic profile.
  • Flavor: Intense and full, with a perfect balance between the sweetness of sheep's milk and a light flavor, offering a rich and pleasant taste.
